Jim’s Mini Pizzas

These mini pizzas were a nice change of pace from our usual quick lunches, which tend to be tuna, canned soup, or a sandwich. They aren’t as satisfying as the kind made with regular pizza dough, but they’re fast and convenient enough that “not quite as good” is a fair compromise.

Luncheon Pizza


      • 1 package refrigerated biscuits (contains 10)
      • pepperoni slices, chopped into quarters
      • grated mozzarella cheese
      • pizza sauce
      • 1 chopped bell pepper (optional)
      • 2 tablespoons olive oil
      • oregano

Preheat oven to 450 degrees.

Flatten each biscuit into a 3-4 inch round, then arrange on ungreased cookie sheets with at least 2 inches between each biscuit.

Brush biscuits with a small amount of olive oil, and then spread a spoonful of pizza sauce on each one. Season with oregano and top with pepperoni, bell peppers (if using), and grated mozzarella.

Bake for 8-10 minutes, until the biscuit dough has cooked and browned and the cheese is melted.

Serves 5.

When we started cooking our way through Barbie’s Easy-As-Pie-Cookbook, it was with the idea that we’d stay as close to the original recipes as possible except in cases where following Barbie word-for-word would end up wasting food. This was one of those cases.

Barbie’s original Luncheon Pizza recipe calls for salami. It says you can use American cheese slices instead of the mozzarella. And okay, neither of those things is flat-out horrifying, but then… Barbie wants you to make her pizzas with ketchup.

Sorry Barbie, I am not making mini pizzas with ketchup. That is not a thing that will happen in my life. I will try your sour cream and celery side dish and your milk punch that’s too weird to be helped by alcohol, but ketchup on pizza is where I draw the line.

Since I was changing out the “sauce” option anyway, I used the pepperoni I already had on hand instead of buying salami just for this recipe. My husband chopped a bell pepper to put on his, so I threw that in as an option.

Extra Tips:

  • If you don’t need ten mini-pizzas, don’t let that put you off trying this one! It’s easy enough to wrap the remaining biscuit dough in plastic wrap and save it for breakfast the next morning.
  • The oregano here is straight from Easy-As-Pie, so thankfully this isn’t one of those special Barbie recipes that adds absolutely no seasoning.
  • Barbie’s recipe actually calls for “salad oil,” which is a term that mostly comes up in vintage recipes. That usually means an oil with a light, neutral flavor (think vegetable oil or canola), but here I’ve chosen olive oil since it goes just fine with pizza ingredients.

Final Thoughts:

The biscuit flavor in these comes through clearly, so this isn’t the recipe for you if you aren’t a fan of those. The fluffiness of the biscuits also worked against the recipe a bit because pressing this dough out thinly led to weak, slightly soggy spots in the crust. While Barbie’s mini pizzas didn’t wow us, there’s a chance I’d make these again if I had the dough on hand and wasn’t in the mood for the rest of what was in the fridge.
