I realized about halfway through today that I hadn’t done a recipe this week. So many things are falling by the wayside in These Uncertain Times. But. We have to make time for the things that are important. And one thing that is important to me is doing recipes from Barbie’s Easy-as-Pie Cookbook and writing blog posts about them, damnit.
And it might be cheating to take one of Barbie’s pointers from 10 Bright Eyed Ways to Begin a Breakfast and call it a recipe, but I’m doing it. It counts! Pour some tomato juice, y’all! Put a lemon in it! Give yourself a gold star for doing All The Things.*
Chilled Tomato Juice with Lemon
- chilled tomato juice
- lemon slice
Pour the tomato juice into a glass. Garnish with the lemon slice. Ideal for breakfast, but also works as an after-work snack.

I know what you’re probably thinking, and I was thinking it too. But I’m out of vodka. sigh
Seriously, take the time for the things that are important to you, even if you have to fight your own inertia and exhaustion to do it. Some things will matter when this is over and done with, and some things won’t. The things you regret not doing matter. (You can tell by the cobwebs around the base of my potted plants that dusting is something I have decided does not matter.)
